Some people have heard of Kit Carson, Colorado and some haven't. And in case you haven't, it's a statutory town in Cheyenne County. Believe it or not, the population was 255 at the 2020 United States census. That's right, 255 people. and although the town is tiny, it offers wonderful options to the folks who are driving through the city, hoping to get of the highway to enjoy a nice meal during a long drive. And one spot that get's all the attention is the Kit Carson Cafe.

After a two-year absence of local dining options due to the closure of previous establishments during the COVID-19 pandemic, the café's opening in August 2024 marked a significant milestone for the town.

The café is part of The Bin Inn LLC, a venture that includes both a motel and the restaurant, aiming to revitalize local hospitality services. The menu features a variety of options, including build-your-own paninis, hamburgers, and homemade desserts, all prepared with fresh, real ingredients. One of the specialties is the "Hart-Par" panini, named after the Hart-Parr tractor displayed in front of the restaurant.
