Once considered a mere pass-through between Colorado Springs and Denver, Castle Rock, Colorado, was often overlooked by travelers. In the 1990s, you might have noticed the occasional business springing up or patches of land being cleared, but the town didn’t capture much attention. Castle Rock, long admired for its natural beauty and convenient location, started to gain recognition for something unexpected: its blossoming culinary scene. Long ago, when you drove north on I-25, you wouldn't turn your head when passing through Castle Rock. Well, that's really changed for the better.

At the core of this transformation is the revitalization of downtown Castle Rock. The ambitious Riverwalk project—a $60 million mixed-use development—has become a catalyst for urban renewal. By integrating retail spaces, office units, and upscale apartments, the project encourages a walkable lifestyle where residents can dine, shop, and work all within a thriving hub.

One of the most compelling additions to Castle Rock’s food scene is the Ecclesia Market. Opened in 2019 within a repurposed historic church, this multi-level food hall has become a community centerpiece. Visitors can enjoy flavorful mixed drinks at Sinners & Saints Craft Cocktail Lounge and Middle Eastern street food at Arayes Grill. The market offers customers the opportunity to satisfy their appetites from several food vendors, bars, and live entertainment in the convenience under one roof.

Castle Rock’s population has grown significantly in recent years—up 51.68% from 2010 to 2020, reaching over 73,000 residents. Today, more than 83,000 people call Castle Rock their home. This growth has directly fueled a thriving culinary environment, a fresh, new and thriving community, expanding real estate options and entrepreneurial spirit. Restaurateurs such as John Johnson have opened notable establishments like The Block & Bottle and Slab Deli & Z'Abbracc as well as other big hits like B’s Craft Deli & Market - offering elevated comfort dishes and curated deli items. Even within 2 square miles, near the Castle Rock Parkway exit (off of I-25), you find more than a dozen eateries at your convenience - Los Dos Potrillos, Cuba Cuba, I.C. Brewhouse and many more.

The town’s booming population and reputation have also caught the attention of die-hard foodies who welcomed new ideas to the area. One spot, The Library Co. Bar & Kitchen, has gained an impressive following in a short time. Serving the Castle Rock community with delicious brunch, lunch, dinner, and drinks, customers sit back and enjoy dishes like flat iron steak, mahi tacos, and chicken parmigiana, paired with craft beers, wines, or their signature cocktails. Without question, the expansion of hot spots like this are a clear signal of rising demand for diverse and high-quality dining experiences in the area.

Excitement is also building around upcoming restaurant openings (and new retailers) at the Promenade at Castle Rock. For those who haven't visited the Promenade, it combines everyday shopping convenience & upscale town center charm. The 166-acre project showcases an open-air format featuring a distinct modern take on historic Colorado architecture. Two anticipated concepts—The Brinkerhoff and Bar Hummingbird—are currently in development. These ventures, led by Brinkerhoff Hospitality (the group behind La Loma and Sierra Restaurant), are expected to bring even more variety and culinary sophistication to the town’s dining landscape. By merely glancing at the retailers and opportunities from this spot, it's obvious why more people are moving to Castle Rock.

Castle Rock’s food culture isn’t limited to restaurants alone. Events like the Castle Rock Winefest help foster a sense of community and appreciation for gourmet fare. The festival features seminars on sustainable viticulture, wine pairings, and regional food education, offering both fun and enrichment to attendees.

Many local eateries have embraced sustainability, sourcing fresh ingredients from nearby farms and vineyards. New ideas and businesses emerge for foodies, real estate investors and various commercial opportunities that help this town grow, produce and entice others to consider Castle Rock their new home. The distinctive high-altitude wines, an emphasis on local sourcing and a sincere support of Colorado-area farmers deepens the town’s culinary identity.
