Within the heart of Pueblo, Colorado, The Cutting Board has quickly become a beacon for plant-based diners and vegetable enthusiasts alike. Known for its creative twists on vegan cuisine and farm-fresh ingredients, this eatery is more than just a restaurant—it’s a culinary experience. Whether you’re a committed vegan, a vegetarian, or simply curious about plant-based dining, The Cutting Board offers a warm and inviting space where vibrant flavors take center stage.

Upon stepping inside, diners are greeted by a cozy yet modern ambiance. Exposed brick walls and wooden accents evoke an earthy charm, while splashes of greenery add life to the space. Floor-to-ceiling windows bathe the restaurant in natural light during the day, creating a bright and welcoming atmosphere. At night, soft lighting transforms the space into an intimate dining venue, perfect for a date or a gathering with friends.

The Cutting Board’s menu is a testament to the creativity of its culinary team. One standout starter is their beet tartare—a beautifully plated dish that mimics the texture and presentation of traditional tartare while showcasing the beet’s earthy sweetness. Their signature roasted cauliflower wings, served with a tangy vegan ranch dressing, have become a crowd favorite for their crispy, caramelized edges and bold seasoning.

Entrees at The Cutting Board elevate plant-based dining to new heights. The mushroom risotto, made with a medley of wild mushrooms and a touch of truffle oil, is decadently creamy and deeply satisfying. Another highlight is the jackfruit “barbacoa” tacos, where tender, smoky jackfruit is paired with a zesty slaw and fresh lime for a burst of flavor with every bite. For those craving comfort food, the vegan mac and cheese—crafted with a house-made cashew cheese sauce—hits all the right notes of indulgence.

Desserts at The Cutting Board are just as inventive as their savory offerings. Their avocado chocolate mousse is a revelation: velvety, rich, and topped with a sprinkling of sea salt for balance. The lemon chia seed cake, with its bright citrus notes and moist crumb, is another must-try, offering a light and refreshing end to the meal.

Now - Beyond the food, The Cutting Board takes pride in sourcing its ingredients locally whenever possible. Their partnerships with nearby farms ensure that diners enjoy produce at peak freshness. This commitment to sustainability not only elevates the flavor of their dishes but also reflects the restaurant’s dedication to supporting the local community.

For anyone visiting or living in Pueblo, The Cutting Board is a must-visit destination. With its inspired menu, warm atmosphere, and emphasis on fresh, local ingredients, it’s clear why this plant-based eatery has earned a loyal following. Whether you’re seeking a healthy meal or an indulgent treat, The Cutting Board invites you to experience the delicious possibilities of vegan cuisine.

Bottomline - They offer delicious vegan food, the staff is friendly and the service is fast! Write before drafting this article, I spent another visit there, ordered 'the hillside' with fries and my wife ordered the nachos - we shared some and both were great. The meals were large so we brought the leftovers back and they were kind enough to give us a box with a smile. It was cool vibe and well worth your time and money. I definitely recommend The Cutting Board.
